coconut bliss, oh my!

today be & co. had an exorbitant grocery shopping trip. they started out at costco but decided a membership wasn't really worth it for them at this juncture. little pixie was already so tired she fell asleep in the cart sitting up...poor baby.
their final destination ended up being fred meyer's as they appear to have the best selection of organic/natural food in the vicinity. be & co. picked up many tempting delights, some that are familiar and some that will be new culinary encounters. the latter includes spelt noodles, brown rice shells and a five grain tempeh! they can't wait to try them and will post their opinions when they do (and maybe recipes)! the former consists of exciting things such as: fresh goat cheese, tofurky italian sausages, whole soy & co. yogurt, organic strawberries, organic blueberries, organic raspberries and coconut bliss ice cream!
the shopping trip became quite *thrilling* as pixie was very 'helpful' with taking things off of shelves and attempting to explore the world of bulk bins. also, running as far away as possible while still within sight seems to be a new experiment of hers. (be can't wait to re-read unconditional parenting by alfie kohn as soon as it arrives from amazon!) feisty pixie and hungry baby sprout ended up taking be to the car while hero took care of the checkout and loading the foodstuffs into the car.
after they got home be made dinner while hero put the provisions away and re-organized a few cupboards. pixie fed the chickens some leftover bread and sprout took a little snooze.
for dinner be sliced and browned a tofurky sausage, sauteed a green bell pepper with some crimini mushrooms then added some leftover brown rice. she seasoned it with soy sauce and topped it with a bit of crumbled goat cheese. she forgot to take a picture due to her ravenous appetite or it would be pictured here. the coconut bliss on the other hand...ah, so delightfully cool and refreshing! be served it up with blueberries and raspberries: ravishing to the sight and taste buds! on a side note, coconut bliss doesn't scoop as perfectly as some other ice creams but the texture and flavor more than compensate for that slight superficial imperfection. the creaminess and the berries together are the perfect springtime treat! it's like a beautiful sunny day for your mouth.
