baby biscotti
ingredients:
1 banana, mashed
1/4 cup maple syrup(could use concentrated fruit juice)
2 tablespoons milk(soy, almond, rice, whatever)
1 tablespoon applesauce
1 tablespoon olive oil
2 cups spelt flakes or any grain/flour(ground up in a coffee grinder to a coarse-ish flour)
dash of salt
instructions:
mix everything into a stiff dough. shape into a rectangle about 3/4" thick. the size isn't important. place on an oiled cookie sheet. bake for 25 minutes at 350'. remove from oven and slice the 'loaf' thickly. turn the pieces on their sides. return to the oven for 10 minutes. turn onto other side and bake for another 10 minutes.
let cool then break each piece in half for baby sized teething biscotti's!
